Pumpkin bran muffins for fall

Healthy Pumpkin Muffins

This recipe takes muffins to a new level, providing a good source of fiber, protein and vitamin A.

Ingredients

  • 1-1/2 cups oat bran
  • 1/2 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 2 tsp baking powder
  • 1 tsp pumpkin pie spice
  • 1/2 tsp salt
  • 2 egg whites
  • 1 cup canned pumpkin
  • 1/2 cup fat-free milk
  • 2 tablespoons canola oil

Directions

  1. In a small bowl, combine the dry ingredients (items one through six on the above list).
  2. In a second bowl, whisk the egg whites, pumpkin, milk and oil until well blended.
  3. Stir into dry ingredients until the mixture is not lumpy.
  4. Coat nine muffin cups with cooking spray and fill halfway with batter.
  5. Bake at 400° for 20-25 minutes or until a toothpick inserted near the center comes out clean.
  6. Cool for five minutes before removing from pan to a wire rack. Serve warm.
